His approach is not driven by complexity for the sake of impression, but by clarity of idea and emotional depth of flavour. He begins with familiar Dalmatian foundations, grilled fish, olive oil, citrus, aromatic herbs, and family recipes, and reinterprets them through a modern lens. The result is cuisine that feels both recognisable and unexpected, creating a connection that guests experience emotionally rather than just visually.
Stjepan’s cooking is rooted in authenticity, experience, and deep respect for the ingredient. He places particular focus on raw fish, clean Mediterranean flavours, and creative presentation that transforms dinner into a complete experience. His ambition is to shape contemporary Dalmatian gastronomy that can stand confidently alongside the global culinary scene, while preserving its distinct local character.
